Buy BONELESS SKINLESS CHICKEN THIGHS.
Accept NO substitutes... for whatever reason, the white meat or other cuts of meat just don't hold a candle to the thighs. Fresh off the grill it will (and has) converted the most die hard white meat eaters...
That said, if you absolutely must use white meat, I would recommend Breast Tenders...
You need to get oyster sauce, and hoisin sauce. Available at most groceries,
you might have to look for the hoisin a bit. It is necessary to have both.
Essentially the recipe is very much an "eye ball" recipe... ( no there are not eye balls in it), but everything is guestimated...
Throw all the chicken into a good size bowl. Then put two parts oyster sauce
to one part hoisin sauce in the bowl. You want to get enough to coat all the
pieces of chicken very thoroughly and thickly. Also add some diced onion and
some minced garlic. Mix it up and that's pretty much it.
If you want it to be extra special, mix it up a couple of hours or more ahead
of time and put a small amount of balsamic vinegar in there. It will help marinate
the chicken. Make sure when you mix the chicken up, you get the sauce into every
crevice of the chicken thighs. They have a tendency to bunch up and get the
sauce only on the outside... so really squish'em around... ( my favorite part)
Anyway, cooking them is very simple... they are very thin, so you can cook them
over pretty high heat and as soon as they have some good coloring and a little
charring on both sides they are fully cooked through the middle.
